Morning my loves, hope you all enjoyed a nice long weekend if you’re in Aus! I got down to the coast and spent some time with my family and partner before coming home and catching up with friends/shopping/training and surprisingly, resting! My resting involved some cooking which inspired me to write this post today because I haven’t shared a new recipe for flippin’ yonks (and I’m also super excited about it)!
I don’t know about ya’ll, but my track record for ‘healthy’ banana bread has not been great. It either A: burns from the protein content (or my lack or cooking skills) or B: turns into this super powdery sunken cake/muffin/thing that you have to follow with a sip of water to tolerate.
Which is why I am so damn excited to tell you… I HAVE FINALLY NAILED IT. Yep, no water required, promise!
Super moist, easy as pie to make (is pie easy to make? …next project) and legit tastes like one you would buy from a cafe BUT better because its not a million calories for a slice or a million dollars.
The whole recipe calculated to be 7 servings at approx 80 grams with the macros of: 107 calories, 1.3g fat, 14.7 carbs and 9.6 protein (please keep in mind that if you use different ingredients these calculations will change). Lets get to banana bread heaven!
Firstly, preheat your oven to 130 degrees (mine is fan forced) so you don’t have to wait even longer to devour!
Here’s what I used!
– I cup of unsweetened almond milk
– 56g of vanilla protein powder, I used Evolve from ASN
– 125g egg whites
– 19g coconut flour
– 43g of pitted dates
– 219g ripe banana (approx 2 medium sized)
– Half a tsp bi carb soda
– 1 tsp vanilla essence
Method: Mix it all in a bowl until mixture is combined. It will be super runny but never fear, it bakes perfectly! Pop in the oven until the top is browned and you can insert a skewer and it comes out clean. Take out, let cool, cut a slice and tell me how much you luuuuurve me.
Next time I’m adding white choc chips!
